An embedding is a way of turning a piece of text into a list of numbers so a machine can judge which texts are about similar things.

It is how a system finds the passage that matches a question when the words do not literally match. For a website owner the practical consequence is that writing the same idea in your buyer's words matters more than repeating an exact phrase.
